Instructions
- In a medium cast iron or rock pan, heat olive oil on medium. 
- Add onion and sauté for 3 minutes until it begins to soften. Add garlic and continue sautéing for 2 more minutes. 
- Add Harissa and sauté for 2 minutes or until the paste has darkened. 
- Add whole tomatoes. With a wooden spoon or spatula, crush tomatoes until smooth. 
- Add spices and herbs. Stir until spices and herbs are mixed well. 
- Create four deep wells and add an egg in each. Cover and let simmer for 8-10 minutes (depending on how you like your eggs). 
- Remove from heat. Add fresh herbs, feta and black pepper to taste. Serve immediately with crusty bread or pita.
