Instructions
- Preheat oven to 350°F. Grease a 9×9-inch square pan. 
- Cut croissants (6) into 3 pieces. Place into square pan and set aside. 
- In a small bowl, whisk eggs (4) until smooth. Add heavy cream (½ cup), Gruyere cheese (¼ cup), everything bagel seasoning (2 tsp) and salt (1 pinch). Whisk until combined. 
- Pour cream mixture over croissants evenly. Tuck in rolled up prosciutto (1 ⅛ cups) and sprinkle with Emmental cheese (¼ cup). Place in the middle rack of the oven for 12 minutes. 
- While the croissants bake, in a saucepan on medium heat, melt butter (¼ cup). Add Dijon mustard (1 tsp) and honey (1 Tbsp), whisk until combined. Set aside to cool slightly. 
- Remove croissant bake from oven and glaze with honey Dijon butter. Serve immediately.
